Thick Bean Stew in Grandma's Style

Ingredients

  • 1 stalk leek
  • 1 onion
  • 1 Garlic clove
  • 6 tomatoes
  • 2 tbsp Vegetable oil
  • 200 ml dry white wine
  • 800 ml vegetable broth
  • 400 g thick beans (canned)
  • Salt
  • Pepper
  • 4 tbsp chopped parsley
  • 120 g smoked salmon

Instructions

    Slice the leek lengthwise, wash, trim and cut into about 1 cm rings. Peel the onion and garlic and dice finely. Wash the tomatoes, remove stems and cut into wedges.

    Heat oil in a large pot and sauté onions, garlic and leeks. Deglaze with white wine and add broth. Drain beans, rinse and add to the stew. Simmer gently for about 10 minutes. Add tomatoes and cook another 5 minutes. Season with salt and pepper, then serve on plates. Sprinkle each plate with 1 tbsp parsley. Slice salmon into strips and arrange on the plates.
