Tempura with Wild Garlic

Ingredients
- 80 g wild garlic
- 50 g Corn flour
- 150 g wheat flour
- 1 tsp Baking powder
- 1 tsp curry powder
- 1 tbsp Olive Oil
- 1 pinch salt
- vegetable oil (for frying)
Instructions

Rinse the wild garlic leaves and pat dry.

Combine corn flour, wheat flour, baking powder, curry, olive oil, and salt; whisk in cold water (~300 ml) until a thick batter forms.

Dip each leaf into the batter and fry in hot oil (~170°C) for about 1 minute until golden brown. Drain on kitchen paper.

Serve with plum sauce if desired.
