Tatar Patties
Tatar patties with tomato-olive salad by Spoonsparrow: Run the meatballs – and make them the finest!
Ingredients
- 1 Shallot
- 400 g ground beef
- 2 egg yolks
- 0.5 tsp Dijon mustard
- 1 tbsp ketchup
- Salt
- Pepper
- 1 tbsp Worcestershire sauce
- 400 g tomatoes (red and yellow, 8 tomatoes)
- 100 g frisée lettuce (half a head)
- 75 g green olives with pits
- 0.5 bunch Chives
- 4 tbsp olive oil
- 1 tbsp balsamic vinegar
- a pinch cane sugar
Instructions

Peel the shallot and finely chop it. Separate the eggs (use the whites elsewhere). Mix the shallot with ground beef, egg yolks, mustard, ketchup, salt, and pepper.

Add Worcestershire sauce.

With wet hands form into 4 patties and refrigerate.

Wash the tomatoes, cut off the stem ends in a wedge shape, and slice them.

Arrange tomato slices decoratively on plates and season with salt and pepper.

Clean, wash, dry, and cut frisée lettuce into bite-sized pieces. Distribute over the tomatoes.

Slice olives thinly from their pits.

Cut chives into fine ribbons. Toss with olives, 3 tbsp olive oil, vinegar, and a pinch of sugar.

Pour over the tomatoes.

Heat a heavy pan and add the remaining oil. Place the patties in the pan and sear each side for 20 seconds on very high heat. Remove the patties with a spatula or a small wooden spoon. Serve the patties with the tomato salad.
