Avocado Hollandaise

This vegan Hollandaise sauce tastes fresh and offers a welcome alternative to the classics: make your own avocado Hollandaise.

Ingredients

  • 1 ripe avocado (200g)
  • 250 ml Water
  • 0.5 lemon
  • 1 tsp Agave nectar
  • Salt
  • Pepper
  • 2 tbsp olive oil

Instructions

    Halve the avocado, remove the pit, scoop out the flesh with a spoon and place it in the blender. Rinse the lemon under hot water, halve it and squeeze one half into the blender.

    Bring the water to a boil, then add agave nectar, salt, and pepper to the blender with the avocado. Blend everything for 1 minute.

    When the mixture is nicely creamy, add the oil and blend for another minute. Done! Serve over asparagus and enjoy.
