Ingredients

  • 200 g Flour
  • a pinch salt
  • 1 tsp sugar
  • 100 g cold butter
  • 1 egg
  • 600 g apples
  • 75 g butter
  • 200 g sugar

Instructions

    Sift the flour onto a work surface, mix with salt and sugar, and create a well in the center. Cut the cold butter into small pieces and distribute around the well; add the egg to the center and use a knife to cut through all ingredients until small dough crumbs form, then quickly knead by hand into dough, shape into a ball, wrap in cling film and refrigerate for about 30 minutes.

    Wash the apples, quarter them and remove the core.

    Grease a tart pan with 50 g butter. Sprinkle a thick layer of sugar (about 100 g) over the butter and arrange the apple quarters on top of the sugar.

    Heat the tart pan on medium heat for about 15 minutes, then lift it off the stove when the sugar begins to caramelize; let it cool briefly, sprinkle the remaining sugar and scatter the rest of the butter in flakes over it.

    Preheat the oven to 220 °C with lower‑and‑upper heat.

    Roll out the dough, lay it over the apples and press the edges down into the pan.

    Bake the tart in the preheated oven for about 30 minutes, remove, let cool slightly, transfer onto a serving plate and serve warm.
