Ingredients

  • 0.5 cucumber
  • 2 Garlic cloves
  • 400 g natural yogurt
  • 200 g Low-fat quark
  • 3 sprigs dill
  • Salt
  • Pepper (freshly ground)
  • 0.5 tsp Chili flakes
  • Lemon juice
  • 1 old-fashioned roll
  • 1 Shallot
  • 1 Garlic clove
  • 3 tbsp vegetable oil
  • 600 g beef tartar
  • 1 tbsp Medium-hot mustard
  • 1 egg
  • dill tips (for garnish)

Instructions

    For the tzatziki peel the cucumber, cut it lengthwise in half, deseed and dice the flesh. Peel the garlic, press into the cucumber cubes and mix with yogurt and quark. Rinse the dill, shake dry, finely chop the tips and fold in. Season the tzatziki with salt, pepper, chili flakes and lemon juice and refrigerate until serving.

    Soak the roll in lukewarm water for the patties.

    Peel and finely chop the shallot and garlic; sauté in a hot pan with oil until translucent. Remove from heat and let cool.

    Combine the ground beef with mustard, egg, well‑drained roll and the shallot mixture; knead and season heavily with salt and pepper.

    Shape 12 equal patties from the mixture and fry them in a hot pan with remaining oil until golden brown on all sides. Reduce heat and finish cooking the patties. Plate with tzatziki and garnish with dill tips.
