Thai Soup with Shrimp

Ingredients
- 500 g shrimp
- 2 tbsp dried shrimp
- 1 stalk lemongrass
- 2 tbsp oil
- 0.5 bunch cilantro
- 2 Garlic cloves
- 1 tsp coarse black pepper
- 4 shiitake mushrooms
- 1 piece galangal (or ginger 2-3 cm)
- 2 red chilies
- 4 Tbsp lime juice
- 4 lime leaves
- 4 tbsp fish sauce
- 1 tsp sugar
- 2 Spring Onions
- Salt

Wash, trim and cut lemongrass into pieces. Toast dried shrimp in oil, deglaze with 1 l water and add lemongrass. Simmer for 15 minutes.

Wash cilantro, shake dry and break off leaves. Peel garlic and roughly chop with cilantro, then grind with pepper and a pinch of salt into a spice paste using a mortar. Clean mushrooms and slice into strips. Peel galangal and cut into slices. Trim chilies and finely chop. Cut remaining lemongrass into very thin rings.

Strain the broth through a sieve and return to pot. Add chili, spice paste, lime juice, lemongrass, lime leaves, fish sauce and sugar; bring to a boil once. Add galangal, mushrooms and shrimp and let simmer for 2-3 minutes. Wash spring onions, trim and slice into rings. Ladle soup into bowls and garnish with onion rings before serving.
