Ingredients
- 300 g tomatoes
- 2 shallots
- 1 Garlic clove
- 10 tbsp olive oil
- 100 g honey
- 10 tbsp elderflower syrup
- 10 tbsp white balsamic vinegar
- Salt
- black pepper (freshly ground)
- 1 tbsp finely chopped basil
- 100 g Jerusalem artichokes
- oil (for frying)
- 200 g aged Taleggio cheese
Instructions

Parboil the tomatoes for a few seconds, shock them in ice water, peel, quarter and seed. Peel and dice the shallots and garlic.

Heat the oil, sauté the shallots and garlic until translucent, add honey and briefly caramelize over medium heat, then deglaze with Vin Santo and vinegar. Season with salt and pepper, add the tomatoes, bring to a quick boil, and fold in the basil.

Peel the Jerusalem artichokes, slice thinly or shave them, and fry in hot fat until golden. Drain on kitchen paper.

Slice the Taleggio, arrange on a plate, surround with tomatoes and fried chips, and drizzle with a little sauce.
