Ingredients

  • 1 chicken (ca. 1.2 kg)
  • 2 Onions
  • 50 g green olives (pitted)
  • 400 ml Poultry broth
  • 0.5 bunch Parsley
  • 0.5 bunch coriander leaves
  • 2 Garlic cloves
  • 0.5 tsp cumin
  • 0.5 tsp ginger powder
  • 1 pinch saffron
  • 100 g pickled lemons (specialty store, glass or can)
  • 250 g couscous (instant)
  • 250 ml vegetable broth
  • lemon juice
  • salt
  • pepper (ground)

Instructions

    Wash the chicken, pat dry and cut into 8 pieces. Slice the lemons into rounds. Mix the chicken with onions, garlic, chopped herbs and spices in a tajine. Pour in cold broth. Cover, bring to boil and simmer for 30 minutes.

    Pour the cooked vegetable broth over the couscous and let it absorb for about 10 minutes. Fluff with a fork.

    Peel and finely dice the onions and garlic. Add them with chopped olives to the tajine, stir and cook for another 5-10 minutes. Finish by seasoning with lemon juice, salt and pepper, then serve over the couscous.
