Tajine with Beef, Zucchini and Green Beans

- 800 g beef (e.g., shoulder)
- 2 Tomatoes
- 2 onions
- 2 Garlic cloves
- 2 EL olive oil
- 1 TL freshly grated ginger
- 0.5 TL ground turmeric
- 0.5 TL ground cumin
- 1 pinch cinnamon
- 2 EL tomato paste
- 200 ml meat broth
- 1 large zucchini
- 200 g Green beans
- Lemon juice
- Cayenne pepper

Rinse the beef, pat dry and cut into bite-sized cubes. Wash the tomatoes, remove stems and dice small. Peel the onions, halve them and slice into strips. Peel the garlic cloves and mince finely. Brown the beef in hot oil in a tajine. Add the onions, garlic, tomatoes, ginger, turmeric, cumin and cinnamon, stir in the tomato paste, let it cook briefly, then deglaze with broth. Season with salt and simmer covered gently for about 45 minutes. If needed, add more broth. Wash and trim the green beans. Wash the zucchini, quarter lengthwise and cut into ~5 cm pieces. Add both about 15 minutes before cooking ends and continue to simmer until done.
