- 800 g beef (e.g., shoulder)
- 2 onions
- 2 Garlic cloves
- 4 tomatoes
- 2 tbsp olive oil
- 1 tsp freshly grated ginger
- 0.5 tsp ground turmeric
- 0.5 tsp ground cumin
- 1 pinch Cinnamon powder
- 250 ml meat broth
- Salt
- 1 eggplant
- 2 bell peppers (red and yellow)
- 300 g instant couscous
- 1 tsp lemon juice
- black pepper (ground)

Wash the beef, pat dry, and cut into small cubes. Peel the onions and garlic; halve the onions and slice into strips, finely chop the garlic. Wash the tomatoes, remove stems, and cut into pieces.

Brown the beef in hot oil in a tajine. Add the onions, garlic, ginger, turmeric, cumin, and cinnamon, then deglaze with broth. Add the tomatoes, season with salt, cover, and simmer gently for about 1 hour, adding more broth if needed.

Meanwhile, wash, trim, and slice the eggplant; salt and let it sit in water for about 10 minutes, then pat dry and cube. Wash, halve, trim, and dice the bell peppers. Add both to the tajine and continue simmering for another ~20 minutes.
