Tagliatelle with mushroom sauce and walnuts is a perfect after-work recipe – quick to make, healthy, and made with fresh ingredients.
Ingredients
- 400 g tagliatelle
- Salt
- Pepper (freshly ground)
- 600 g chanterelles
- 1 onion
- 1 piece fresh ginger (walnut-sized)
- 2 tbsp walnut oil
- 2 tbsp cold butter
- 150 ml Vegetable broth
- 100 g crème fraîche
- 4 tbsp chopped walnuts
Instructions

Cook the pasta in plenty of boiling salted water until al dente.

Clean and slice the mushrooms lengthwise. Peel the onion and ginger, finely chop the onion and thinly slice the ginger.

Heat the oil in a pan. Sauté the onion, ginger, and mushrooms over medium heat for 5 minutes, stirring occasionally.

Drain the pasta and toss it with the butter. Stir in the vegetable broth, season with salt, fold in the crème fraîche, and warm briefly. Sprinkle with walnuts and serve over the tagliatelle.
