Tagliatelle with Beef

Ingredients

  • 200 g beef fillet (thin tip piece)
  • Salt
  • freshly ground pepper
  • 4 tbsp olive oil
  • 1 Carrot
  • 1 Zucchini
  • 1 bunch spring onions
  • 1 Garlic clove
  • 500 g Tagliatelle
  • 150 g crème fraîche
  • 1 tbsp capers
  • 1 tbsp finely chopped parsley

Instructions

    Rub the beef fillet with salt and pepper. Heat 2 tbsp olive oil. Sear the beef all around for 6-8 minutes. Cover with foil and set aside.

    Peel the carrot. Clean and rinse the zucchini. Slice the carrot and zucchini into very thin strips. Trim, wash, and finely chop the spring onions. Peel the garlic.

    Heat the remaining olive oil. Sauté the vegetables for about 5 minutes. Press in the garlic. Season with salt and pepper. Keep warm.

    Cook the tagliatelle in plenty of salted water according to package instructions until al dente. In a small pot, mix 4 tbsp pasta cooking water with crème fraîche, add capers and parsley, and heat. Season with salt and pepper.

    Drain the noodles and let them drain fully.

    Slice the beef fillet into thin slices. Combine the tagliatelle with beef, vegetables, and sauce, then plate.
