Vegetable Tagliatelle with Goat Cream Cheese Sauce

Vegetable tagliatelle with goat cream cheese sauce. Zucchini noodles are a classic in low-carb diets and this sauce makes them simply delicious.

Ingredients

  • 1 cucumber
  • 3 zucchini
  • 1 Garlic clove
  • 2 sprigs thyme
  • 4 tbsp walnut kernels
  • 2 tbsp olive oil
  • 100 ml Vegetable broth
  • Salt
  • Pepper
  • 150 g crème fraîche
  • 150 g goat cream cheese
  • 2 tbsp lemon juice

Instructions

    Peel and wash cucumber and zucchini, cut lengthwise in half, remove seeds and use a vegetable peeler to create long thin strips. Peel garlic and finely chop. Wash thyme, shake dry and pluck leaves. Roughly chop walnuts.

    Heat oil in a large pan. Sauté garlic for 2 minutes over medium heat. Add zucchini strips and sauté for 3 minutes. Pour in broth, season with salt and pepper, and simmer for 2 minutes.

    Stir in crème fraîche and goat cream cheese, let thicken slightly for 3–4 minutes over medium heat. Fold in cucumber and thyme, adjust seasoning with lemon juice, plate on dishes and sprinkle walnuts.
