Tagliatelle

Ingredients
- 250 g green asparagus
- Salt
- 1 bunch Basil
- 1 Shallot
- 2 tbsp butter
- 150 ml milk
- 100 ml heavy cream
- 100 g Gorgonzola cheese
- freshly ground pepper
- a few drops lemon juice
- 500 g Tagliatelle
Instructions

Peel the lower third of the asparagus spears, trim the ends generously and cut the asparagus into bite-sized pieces. Cook in salted water for about 5 minutes. Drain the asparagus, rinse with cold water and let it drain on a sieve.

Rinse the basil (reserve some leaves for garnish), shake dry and finely chop. Peel and dice the shallot finely. Heat the butter. Sauté the shallot until translucent.

Add the basil, milk and cream and bring to a boil. Stir in the Gorgonzola pieces with a whisk. Season with salt, pepper and lemon juice. Add the asparagus to the sauce and heat briefly.

Cook the tagliatelle in plenty of salted water according to package instructions until al dente. Drain and let it drain. Toss the pasta with the asparagus sauce and serve garnished with basil.
