Ingredients

  • 400 g tagliatelle
  • 2 bunches of curly parsley
  • 3 tbsp pine nuts
  • 1 Garlic clove
  • 75 ml olive oil
  • 100 g Parmesan
  • Salt
  • freshly ground pepper

Instructions

    Cook the tagliatelle in boiling water according to package instructions until al dente.

    Meanwhile, rinse the parsley, shake dry and pluck the leaves from the stems. Toast the pine nuts without added fat in a pan. Peel and roughly chop the garlic.

    Place the toasted pine nuts, parsley leaves, garlic, and olive oil in a tall, narrow vessel and blend with an immersion blender. Add more oil if needed. Season generously with salt and pepper. Grate the Parmesan finely and fold it into the mixture.

    Plate the tagliatelle on a dish and serve with the pesto sauce.
