Pasta with Parsley Pesto

Ingredients
- 400 g spaghetti
- Salt
- 2 Garlic cloves
- 30 g pine nuts (2 tbsp)
- 1 bunch parsley
- 60 ml olive oil
- 30 g Parmesan cheese (1 piece)
- 1 splash Lemon juice
Instructions

Cook spaghetti in boiling salted water according to package instructions until al dente.

Meanwhile, peel and chop the garlic. Toast the pine nuts in a pan over medium heat without fat until fragrant, then set aside.

Wash the parsley, shake off excess water, and remove leaves from stems. Blend parsley with toasted pine nuts, garlic, and olive oil in a blender until smooth.

Grate the parmesan and mix it into the pesto, seasoning with salt and a splash of lemon juice to taste.

Drain the pasta, toss it with the pesto, and serve arranged in nests on four plates.
