Ingredients

  • 1 kg Tafelspitz
  • 2 tsp peppercorns (black)
  • 1 bay leaf
  • 4 Carrots
  • 2 parsley roots
  • 2 onions
  • 1 stalk leek
  • Salt
  • fresh grated horseradish (for garnish)

Instructions

    Place the meat in a large pot and pour about 3 l of water over it. Add pepper and bay leaf, slowly heat, bring to a boil and let simmer gently for about 2.5 hours, skimming off foam as needed.

    Wash, peel, and dice carrots, parsley roots, and onions; clean and slice leek into rings. Add the vegetables to the broth with about 2 hours of cooking time.

    Finally remove the meat from the broth, slice it, and serve on top of the vegetables with some broth poured over. Garnish with horseradish.
