Ingredients

  • 1 chili pepper
  • 1 onion
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 500 g ground beef
  • 2 tbsp Tomato paste
  • Salt
  • Cayenne pepper
  • paprika (sweet)
  • 0.5 tsp Oregano
  • 2 Romaine Lettuce Hearts
  • 200 g Cherry tomatoes
  • 2 tbsp freshly chopped parsley
  • black pepper (ground)
  • 8 taco shells
  • 2 limes
  • 150 g shredded cheese (e.g., Gouda or Cheddar)

Instructions

    Wash the chili, remove seeds and dice finely. Peel and dice the onion and garlic. Sauté the chili, onion, and garlic in 2 tbsp hot oil, add the ground beef and cook until crumbly. Add tomato paste, 2-3 tbsp water, and season with salt, pepper, paprika, and oregano. Remove from heat.

    Wash the lettuce, dry, and cut into strips. Wash tomatoes and quarter them. Mix remaining olive oil, parsley, salt, and pepper in a bowl. Warm taco shells according to instructions and slice limes into wedges. For serving fill taco shells with some salad, ground beef, and tomato salsa. Sprinkle shredded cheese and drizzle lime juice.
