Ingredients

  • 250 g mushrooms (or oyster mushrooms)
  • 1 Lime (juice)
  • 1 Red Onion
  • 2 fresh garlic cloves
  • 250 g cherry tomatoes (red, yellow, green and black)
  • 2 red bell peppers
  • a handful of coriander leaves
  • 3 tbsp olive oil
  • a pinch brown sugar
  • Sea salt
  • chili flakes
  • 4 taco shells

Instructions

    Clean the mushrooms and slice them thinly. In a bowl mix with lime juice and let sit in the refrigerator for about 1 hour.

    Peel, halve and finely slice the onion. Peel and thinly slice the garlic cloves. Wash, clean and quarter the tomatoes. Wash, halve, clean and dice the bell peppers. Rinse the coriander leaves, shake dry and roughly chop them.

    Combine all prepared ingredients with olive oil, brown sugar, sea salt and chili flakes, mix into the mushrooms and season to taste.

    Serve in taco shells filled with the mixture.
