Ingredients

  • 200 g fine bulgur
  • 1 cucumber (salad)
  • 3 tomatoes
  • 1 mild red onion
  • 2 handfuls parsley
  • 2 lemons
  • 4 tbsp olive oil
  • Salt
  • pepper (ground)
  • 2 tbsp flax seeds

Instructions

    Cover the bulgur with lukewarm water and let it soak for about 20 minutes. Peel and dice the cucumber. Wash the tomatoes, remove stems, and dice them as well. Peel the onion and finely chop it. Rinse the parsley, shake dry, set aside a few leaves for garnish, and finely chop the rest. Halve the lemons; cut one into wedges and juice the others.

    Whisk lemon juice with olive oil and season with salt and pepper. Drain the bulgur, rinse cold, squeeze out excess water, and mix in a bowl with the flax seeds. Add the vegetables and dressing, combine, taste, and let it rest for about 30 minutes.

    Taste again before serving, garnish with lemon wedges and parsley, and serve.
