Ingredients

  • 2 untreated oranges
  • 1 tbsp capers
  • 0.5 bunch Basil
  • 150 g ricotta
  • 150 g cream cheese
  • Salt
  • Pepper (freshly ground)
  • 200 g smoked salmon (sliced)
  • 2 tbsp white wine vinegar
  • 1 tsp sharp mustard
  • 4 tbsp Walnut oil
  • 200 g mixed leafy salad

Instructions

    Wash the oranges hot, grate 1 tsp zest and then squeeze the juice. Finely chop the capers and basil leaves. Mix ricotta with cream cheese, basil, half of the orange zest, capers and 4 tbsp juice; season with salt and pepper.

    Lay smoked salmon slices side by side on cling film, spread the ricotta mixture over them, roll using the film and place in the freezer for 1 hour. From the remaining orange juice, zest, vinegar, mustard, oil, salt and pepper whisk a vinaigrette.

    Wash, rinse, dry and trim the salad as needed. Distribute on plates and drizzle with vinaigrette. Remove salmon rolls from film, slice into rounds and arrange on the salad. Garnish with chives and serve.
