Ingredients
- 1 kg mostly waxy potatoes
- 1 egg
- Salt
- nutmeg
- 4 Tbsp sunflower oil

Peel the potatoes, grate them, wrap in a damp kitchen towel and squeeze into a bowl.

Let the potato juice sit until starch settles at the bottom, then pour off the liquid.

Mix the potato starch with the grated potatoes and egg, seasoning with salt and freshly grated nutmeg.

Heat oil in a pan. Drop spoonfuls of the potato mixture into the pan, flatten them, and fry on medium heat for about 1–2 minutes per side until golden brown; drain on paper towels.
