Simple Ciabatta

Ingredients
- 500 g wheat flour type 550
- 100 g wheat bran (Type 1700)
- 300 ml lukewarm water
- 42 g fresh yeast (1 cube)
- 3 tbsp olive oil
- 1 tsp salt
- flour (for the work surface)

Add flour to a bowl, set aside 1 tbsp of the bran. Mix the remaining bran, 2 tbsp oil and the salt with the flour. Crumble the yeast, stir it into the lukewarm water until smooth, then combine with the flour mixture. Knead everything into a smooth dough using the kneading hooks of an electric hand mixer, cover and let rise in a warm place for about 45 minutes.

Then knead the dough thoroughly on a floured surface, shape into two balls and let rise again for about 45 minutes. Stretch the dough balls lengthwise apart, brush with remaining oil and sprinkle with reserved bran. Bake in a preheated oven at 240°C for 10 minutes, then reduce the temperature to 200°C and bake for an additional 15-20 minutes until finished.
