Swiss Carnival Treats (Fasnachtschüechli)

You only know Berliner for carnival? Then you should try the Swiss carnival pastry, also called Fasnachtschüechli.

Ingredients

  • 2 Eggs
  • 50 ml whipping cream
  • 2 tbsp Raw cane sugar
  • 1 pinch salt
  • 275 g wheat flour type 1050
  • 1 tbsp butter
  • 100 ml rapeseed oil (for frying)
  • 2 tbsp powdered sugar from raw cane sugar (for dusting)

Instructions

    Whisk eggs with cream, sugar and salt in a bowl. Add flour and butter and knead into a smooth dough until it starts to bubble; add more flour or cream if needed. Cover the dough and let rest for about 20 minutes. Then cut walnut-sized pieces and roll them very thin into circles.

    Place on a towel and fold the edges into waves. Let dry, then fry in hot fat (170 °C) 2–3 minutes per side until golden brown, turning once. Drain on kitchen paper and cool. Dust with powdered sugar before serving.
