Sweet-Spicy Rolls

Ingredients
- 42 g yeast (1 cube)
- 600 g flour
- 4 tbsp raisins
- 1 Garlic clove
- 4 tbsp pesto
- 4 tbsp olive oil
- 2 tsp salt
- 0.5 tsp white pepper

Dissolve the yeast in about 200 ml lukewarm water. Stir in 3-4 tbsp flour and let rest covered for about 10 minutes.

Meanwhile, chop the raisins finely. Peel the garlic, press it into the pesto and mix. Add the remaining flour, raisins, pesto, oil, salt, and pepper to the pre-ferment and knead until smooth. The dough should be supple and detach from the bowl edges. If too dry, add a little more water; if too wet, fold in some extra flour. Divide the dough into 16 equal pieces and shape into small rolls. Place on a baking sheet with parchment paper (use two sheets if needed) and cover with a cloth to rest for about 30 minutes in a warm spot.

Preheat the oven to 200°C (400°F) with upper and lower heat.

Brush the rolls lightly with water and bake for 15-20 minutes.
