Batter with Oil and Applesauce

Basic batter recipe – using oil and applesauce: canola oil has a healthy fatty acid profile, plenty of vitamin E, and the use of applesauce saves fat calories.
Ingredients
- 3 eggs
- 100 ml canola oil
- 100 g sugar
- 200 g unsweetened applesauce
- 30 g soy flour (2 tbsp)
- 300 g spelt flour (Type 630)
- 0.5 packet Baking powder
- 100 ml Buttermilk

Add eggs, oil, sugar, applesauce and soy flour to a mixing bowl.

Beat the ingredients with a hand mixer until the sugar dissolves.

In another bowl mix spelt flour and baking powder, then sift into the applesauce mixture.

Pour in the buttermilk and stir everything into a smooth batter. If it is too runny, add 1–2 tbsp more flour. Use the batter as directed or fold in nuts, dried fruit (e.g., raisins, cranberries, chopped apricots) or chocolate chips.
