The Sweet Spelt-Apple Bread from Spoonsparrow is perfect for a quick snack or a lovely start to the day!

Ingredients

  • 1 Organic Orange
  • 125 g raisins
  • 500 g tart apples
  • 150 g soft butter
  • 100 g coconut blossom sugar
  • 3 eggs
  • 50 g apple sauce
  • 250 g spelt whole‑grain flour
  • 50 g ground hazelnuts
  • 3 tsp baking powder

Instructions

    Wash the orange hot, pat dry and grate the zest. Squeeze out the juice. Drizzle the raisins with the orange juice and let them soak.

    If needed, grease a loaf pan and dust it with flour or line it with parchment paper. Beat the butter with an electric mixer until fluffy. Gradually fold in the coconut blossom sugar, orange zest, and eggs, mixing well after each addition. Then add the apple sauce. Mix the flour, hazelnuts, and baking powder together and quickly fold into the batter. Gently stir in the apple‑raisin mixture and pour the dough into the pan.

    Bake in a preheated oven at 180 °C (fan 160 °C; gas 2–3) for about 70 minutes. After roughly 30 minutes, cut the loaf lengthwise. Let it rest briefly in the pan after baking, then turn out onto a wire rack to cool.
