Sweet Potatoes with Tahini Butter

The sweet potatoes with tahini butter from Spoonsparrow are the perfect clean‑eating snack.

Ingredients

  • 4 sweet potatoes (1.6 kg)
  • 1 tbsp peanut oil
  • 1 Garlic clove
  • 100 g Soft Butter
  • 60 g tahini (sesame paste; 4 tbsp)
  • 1 tbsp lime juice
  • Salt
  • ground cumin
  • Pepper
  • 0.5 bunch chives (10 g)
  • 1 Organic Lime
  • 10 g sesame seeds (1 tbsp)

Instructions

    Wash sweet potatoes thoroughly, halve them lengthwise and place in a baking dish. Brush with oil and bake in a preheated oven at 200 °C (180 °C fan‑forced; gas: level 3) for 30–35 minutes until tender.

    Meanwhile peel and finely chop the garlic. Whisk butter with tahini until creamy, then season with lime juice, salt, cumin and pepper.

    Season potatoes with salt and pepper, brush each half with a little tahini butter, and bake in the turned‑off oven for 10 minutes to melt the butter.

    In the meantime wash, dry and finely chop chives. Peel the lime and cut into wedges. Remove potatoes from the oven, sprinkle with sesame seeds and chives, then serve with remaining tahini butter and lime wedges.
