Sweet Potatoes with Feta and Kale

Ingredients

  • 1.2 kg sweet potatoes (4 small sweet potatoes)
  • 250 g chickpeas (canned; drained weight)
  • 2 red onions
  • 3 tbsp red wine vinegar
  • Salt
  • 1 tsp Honey
  • 50 g feta (45% fat in whole milk)
  • 2 tbsp olive oil
  • 0.5 tsp Chili flakes
  • 100 g young kale
  • 5 g arugula (1 handful)
  • 30 g pumpkin seeds (2 tbsp)

    Remove sweet potatoes from the oven, split lengthwise and arrange on plates. Distribute chickpeas, onion rings, marinated feta, kale, arugula and pumpkin seeds over them and serve.
