Swiss Mushroom Gratin

Ingredients
- 800 g Mushrooms
- 3 shallots
- 2 Garlic cloves
- 10 thin slices bacon
- 1 tbsp butter
- 4 tbsp fresh parsley
- fat (for the dish)
- 200 ml whipping cream (min 30% fat)
- 100 ml chicken broth
- Salt
- pepper (from grinder)
- 250 g Gruyère cheese

Preheat the oven to 180°C fan.

Clean the mushrooms with a damp kitchen cloth and halve larger ones. Peel and finely chop the shallots and garlic cloves. Cut the bacon into strips and fry in butter for 2 minutes until crisp. Wash and finely chop parsley; set aside some for garnish. Mix the mushrooms with bacon, shallots, garlic, and parsley.

Grease a baking dish, arrange the mushroom mixture, season with salt and pepper, then pour over the cream and broth. Bake in the preheated oven for about 25 minutes. Meanwhile grate the cheese. Sprinkle the grated Gruyère over the gratin, raise the temperature to 200°C, and bake another 10 minutes until golden brown.
