Ingredients

  • 800 g sweet potatoes
  • 400 ml apple cider vinegar
  • 6 tbsp brown sugar
  • 1 tsp dill seeds
  • 1 tsp mustard seeds
  • 1 tsp salt
  • 1 bunch dill

    Peel the sweet potatoes, cut them lengthwise into thick slices, then halve each slice and cut across into 4 cm long pieces. Bring vinegar with 600 ml water, sugar, dill seeds, mustard seeds, and salt to a boil; add the potatoes and simmer over medium heat for 10 minutes.

    Wash the dill, pat dry, place the dill sprigs and sweet potato pickles in the very hot rinsed jars with the hot brine. The potatoes must be fully covered; seal the jars tightly.
