Sweet Potato Tart

Ingredients
- 300 g sweet potatoes
- 300 g starchy potatoes
- 250 g puff pastry
- flour (for dusting)
- soft butter (for the pan)
- 3 eggs
- 3 tbsp cornmeal
- 5 tbsp beet sugar syrup
- 75 g liquid butter
- 0.5 tsp ground cinnamon
- 0.5 tsp ground clove
- 0.5 tsp grated nutmeg

Preheat the oven to 200°C fan-forced. Wash the sweet potatoes and starchy potatoes and bake them on a sheet in the oven for 30-40 minutes until soft.

Meanwhile, roll out the puff pastry on a floured surface to fit the pan and line the greased pan with it. Trim any excess dough.

Let both potato varieties cool slightly and peel. Then mash them finely in a bowl with a potato masher. Stir in the eggs, cornmeal, beet sugar syrup, and liquid butter. Season with cinnamon, clove, and nutmeg. Pour the mixture into the pan and bake in the middle of the oven for about 40 minutes.

Allow to cool, remove from the pan, and dust with powdered sugar before serving as desired.
