Ingredients

  • 375 g flour
  • 100 g cold butter
  • Salt
  • flour (for dusting)
  • 600 g Sweet Potatoes
  • 1 onion
  • 400 ml whipping cream
  • 4 tbsp grated Parmesan
  • 3 eggs
  • Salt
  • Pepper (freshly ground)
  • 2 red bell peppers
  • 300 g goat cheese

Instructions

    Sift the flour for the dough, cut the butter into cubes. Mix both with salt and about 60 ml water quickly to a smooth dough, wrap in cling film and let rest in the fridge for 30 minutes.

    Preheat the oven to 180 °C fan. Line the quiche tin with parchment paper.

    Peel and dice the sweet potatoes and onion. Whisk together the cream, parmesan and eggs until smooth; season with salt, pepper and nutmeg.

    Roll out the dough on a floured surface, place it in the tin and form a rim. Distribute the potato and onion over the base. Pour the egg‑cream mixture over them. Bake for about 30 minutes. While baking, wash, halve, core and slice the bell peppers into thin strips. Slice the goat cheese and scatter both on top of the quiche. Finish baking another 15 minutes until golden brown and serve.
