Sweet Milk Rice Sushi with Candied Ginger

Ingredients
- 200 ml unsweetened coconut milk (canned)
- 200 ml milk
- 1 tbsp sugar
- 1 packet vanilla sugar
- a pinch of salt
- 1 cinnamon stick
- 100 g milk rice
- 60 g strawberries
- 1 piece papaya
- lemon balm leaf for garnish
- 100 g candied ginger

Add coconut milk, milk, sugar, vanilla sugar, salt and cinnamon stick to a large pot and bring to a boil. Sprinkle in the rice and simmer over very low heat for about 25 minutes, stirring occasionally, until the rice has absorbed the liquid. Remove the cinnamon stick and let the rice cool.

While the rice cooks, wash, clean and slice the strawberries into thin rounds. Halve the papaya, remove the seeds and peel it. Slice the fruit flesh into thin strips.

Divide the cooled milk rice into 8 portions and shape each portion with damp hands into oval nooks. Top with fruit slices and lemon balm leaves. Dice the candied ginger and serve alongside the milk rice sushi.
