Ingredients

  • 1 stalk lemongrass
  • 2 cm ginger
  • 150 g rice pudding
  • 400 ml coconut milk
  • 50 g palm sugar
  • 2 star anise
  • 100 g marzipan dough
  • green food coloring
  • powdered sugar
  • 30 g Sesame seeds
  • 100 g honey
  • 4 Tbsp lime juice
  • 0.25 mango
  • 0.25 papaya
  • 1 Kiwi

Instructions

    Clean and wash the lemongrass. Peel the ginger and slice it. Combine both with rice pudding, coconut milk, palm sugar, and star anise; simmer on low heat for 15 minutes. Turn off the stove and let the rice rest covered with a kitchen towel for about 15 more minutes, stirring occasionally. Remove ginger, star anise, and lemongrass. Let the rice cool.

    Knead the marzipan with food coloring and dust with powdered sugar. Roll between two sheets of plastic wrap to a thickness of 1–1.5 mm. Cut into 1 cm wide strips.

    Toast sesame seeds in a dry pan until fragrant. Mix honey, toasted sesame seeds, and lime juice for the dip.

    Divide the rice into 24 portions; shape each with damp hands into small balls. Peel the fruits and slice each into eight thin pieces. From papaya scraps cut 24 mini flowers. Arrange fruit slices on sushi rolls, wrap each with a marzipan strip, press ends together, and garnish with flower petals.

    Serve the sushi on wooden boards or Japanese dishware with the dip on the side.
