Sweet Berry Aspic

Ingredients

  • 10 sheets gelatin
  • 150 g sugar
  • 1 untreated lemon (zest)
  • 500 mixed berries (strawberries, blueberries, raspberries)
  • 200 g melon flesh (e.g., honeydew)
  • 400 ml sparkling wine

Instructions

    Soak the gelatin in cold water. Boil the sugar with 200 ml water and the lemon zest until it thickens into a syrup for about 10 minutes. Remove the zest and take the mixture off heat. Squeeze out excess liquid from the gelatin, warm it gently in a small pot until melted, then stir into the syrup and let cool slightly.

    Wash, clean, and sort the berries; leave whole strawberries or halve them depending on size. Scoop small melon balls with a melon baller and mix into the berries. Fill a loaf pan lined with plastic wrap (or similar).

    Stir the sparkling wine into the syrup and pour over the fruit so it is fully covered. Cover with plastic wrap and refrigerate for at least 4 hours.

    Serve by pouring the aspic out of the mold, removing the plastic wrap. Offer vanilla sauce on the side if desired.
