Sweet Apple Ravioli

Ingredients
- 50 g semolina
- 100 g wheat flour
- 1 egg
- 1 yolk
- a pinch of ground cinnamon
- 20 g powdered sugar
- a pinch of salt
- 250 g apples (about 1 large apple)
- 1 tsp lemon juice
- 250 ml milk
- 80 g sugar
- 0.5 packet vanilla pudding mix (for 250 ml milk to cook)
- 2 tbsp semolina
- flour (for the work surface)
- 1 Egg white
- 1 cup apple sauce
- 2 small apples
- 2 tbsp fruit brandy
- 2 tbsp sugar
- 2 tbsp butter
- 1 tsp cinnamon
- 1 tbsp powdered sugar

Make a pasta dough from the listed ingredients. Shape into a ball, brush with a little vegetable oil, wrap in plastic wrap and refrigerate for about 1 hour.

Peel, quarter, core and grate apples, mix with lemon juice. Bring 200 ml milk and 50 g sugar to a boil in a pot. Whisk remaining milk with the pudding powder until smooth and stir into the boiling mixture. Stir in semolina. Remove from heat and let the custard cool.

Roll out dough on lightly floured surface very thinly. Cut out circles about 8 cm in diameter. Drain apples and mix under the custard. Place 1–2 tsp of filling on one half of each circle, brush edges with egg white, fold over and press firmly to seal.

Wash apples, quarter, core and cut into thin strips. Melt butter in a pot, add sugar and fruit brandy, then apples. Lightly steam them.

Boil plenty of water in a pot and add the ravioli. Reduce heat and cook on medium for about 3–4 minutes until done.

Spread apple sauce on plates, arrange ravioli on top, dust with cinnamon and powdered sugar, and serve.
