Ingredients

  • 400 ml milk
  • 400 ml Coconut milk (canned)
  • 150 g sugar
  • 1 tbsp Cornstarch
  • 100 g freshly grated coconut (or 80 g coconut flakes)
  • 2 tbsp roasted peanuts
  • 1 Mango
  • 1 starfruit

Instructions

    Whisk the cornstarch with a few spoonfuls of milk. Bring the remaining milk, condensed milk, coconut milk and sugar to a boil. Stir in the whisked starch with a whisk into the boiling liquid and let it come to a boil. Remove from heat and allow to cool completely.

    Stir the coconut shreds into the mixture and freeze in an ice cream maker. (Alternatively, you can freeze the mixture in a bowl in the freezer, stirring every 30 minutes until firm.)

    Serve by spooning the coconut ice cream into bowls, sprinkle coarsely chopped peanuts on top, and garnish with sliced mango and starfruit.
