Ingredients

  • 800 g shallots
  • Salt
  • 2 tbsp oil
  • Pepper
  • 100 ml cranberry juice
  • 150 ml red wine vinegar
  • 70 g brown sugar crystals
  • 2 Bay leaves
  • 1 tbsp juniper berries
  • 1 tbsp mustard seeds
  • 1 tbsp pink peppercorns

Instructions

    Peel the shallots and simmer them gently in boiling salted water for 6-8 minutes. Remove with a slotted spoon, measure out 150 ml of the cooking liquid, and set aside.

    In hot oil, sauté the shallots until translucent, season with salt and pepper, then deglaze with cranberry juice, the reserved onion stock, and vinegar. Add the brown sugar crystals and spices; let everything simmer gently for 2-3 minutes.
