Ingredients
- 500 g rosehips
- 80 g sugar
- 1 pinch salt
- 1 pinch cayenne pepper
- 1 tsp starch
- 75 ml whipping cream (at least 30% fat)
- 8 slices toasted white bread (e.g., baguette)

Wash the rosehips, drain, clean, halve and pit them. Mix the rosehips with 1 l water, bring to a boil and simmer uncovered for about 30 minutes on low heat, stirring occasionally.

Pass the rosehip mash through a sieve and top up with water to a total of 1 l; bring to a boil again. Season with sugar, salt and cayenne pepper.

Whisk the starch with a little cold water and add it to the soup to thicken it.

Stir in the cream, taste again, then let the soup cool. Serve lukewarm or chilled, ladle into bowls and serve with toasted bread.
