Spicy Cucumber-Paprika Soup

Ingredients

  • 1 salad cucumber (ca. 300 g)
  • 2 yellow bell peppers
  • 3 tbsp germ oil
  • 1 l vegetable broth
  • 3 tbsp Soy sauce
  • 1 untreated lime (juice)
  • 2 tbsp sesame oil
  • 1 tsp hot paprika powder
  • Salt
  • black pepper (freshly ground)
  • 1 tbsp spicy chili sauce (Asian store)
  • 2 tbsp freshly chopped chives

Instructions

    Peel the cucumber, cut it lengthwise in half, remove seeds, slice into rounds and then cut across into strips. Clean, wash, quarter the bell peppers, remove seeds, discard all white membranes and finely dice the flesh. Heat germ oil in a wok or pot, sauté the bell peppers for about 3 minutes while stirring, add the cucumber cubes and cook briefly together. Add vegetable broth, soy sauce, lime juice, sesame oil, and paprika powder; stir, bring to a boil, cover and simmer for about 3 minutes. Season with salt, pepper, and chili sauce.
