Swabian Potato Salad

Swabian potato salad from Spoonsparrow is made in a flash and makes a great side for the next barbecue!

Ingredients

  • 1 kg potatoes
  • Salt
  • 2 onions
  • 1 tbsp Olive Oil
  • 300 ml Vegetable broth
  • 4 tbsp apple cider vinegar
  • 1 bundle chives (20 g)
  • 4 tbsp rapeseed oil
  • Pepper

Instructions

    Wash the potatoes and boil them in salted water for about 20 minutes. Drain and let cool.

    Peel and finely dice the onions. Heat olive oil in a pot, sauté onions over medium heat for about 3 minutes. Deglaze with broth and simmer for about 5 minutes.

    Meanwhile, peel the cooled potatoes and slice them. Place in a bowl and pour over the hot broth mixture. Add apple cider vinegar and mix well. Let rest for an hour.

    Wash the chives, shake dry, and cut into fine rings. Add rapeseed oil to the potatoes, mix thoroughly, season with salt and pepper, and serve the Swabian potato salad.
