Ingredients

  • 4 oz Whole grain baguette or 2 whole grain rolls (6 slices; 2-4 days old)
  • 4 tbsp olive oil
  • 1 Red Onion
  • 1 clove garlic
  • 17 oz Cherry tomatoes
  • 0.7 oz Basil (1 bunch)
  • 1 tbsp balsamic vinegar
  • Salt
  • Pepper

Instructions

    Cut the whole grain baguette into approximately 2 cm cubes. Heat 1 tbsp of olive oil in a pan. Toast the bread cubes golden brown on all sides over medium heat for 6-8 minutes. Remove from the pan and set aside.

    Peel the onion and garlic. Halve the onion and slice it into strips. Mince the garlic. Heat 1 tbsp of oil in the pan. Sauté the onion and garlic over medium heat for 3 minutes.

    Meanwhile, clean, wash, and halve the tomatoes. Wash the basil, pat dry, and pluck the leaves.

    Mix the remaining oil and vinegar with salt and pepper. Mix the dressing with tomatoes, onions, basil, and bread cubes and serve immediately.
