Sweet Potato Pan
The sweet potato pan with radishes and pomegranate seeds from Spoonsparrow is a healthy lunch or ideal as a side dish.
Ingredients
- 800 g sweet potatoes (2 pieces)
- 20 g Ginger
- 1 bunch radishes
- 1 tbsp Sesame oil
- 0.25 tsp ground cumin
- 0.25 tsp ground coriander
- 1 Lime
- 0.5 pomegranate
- 1 bunch coriander (20 g)
- Salt
- Pepper
Instructions

Peel the sweet potatoes and cut them into approximately 1-1.5 cm cubes. Peel and chop the ginger. Clean, wash, and slice the radishes.

Heat oil in a large non-stick pan. Add the ginger and sauté for 1-2 minutes over medium heat. Add the sweet potato cubes and simmer for about 7-8 minutes over medium heat.

Add cumin and coriander and simmer for 2 minutes. Then add the radishes and simmer for another 2-3 minutes.

Meanwhile, halve the lime and squeeze out the juice. Halve the pomegranate and remove the seeds from the fruit. Wash, shake dry, and pluck the leaves from the coriander.

Deglaze the sweet potatoes with lime juice and season with salt and pepper. Serve the sweet potato pan sprinkled with pomegranate seeds and coriander.
