Stuffed Swiss Chard Rolls with Yogurt Dip

Ingredients
- 8 large Swiss chard leaves
- Salt
- 2 Garlic cloves
- 1 red chili pepper
- 2 tbsp olive oil
- 100 g couscous
- 350 ml vegetable broth (hot)
- Pepper
- a pinch ground cinnamon
- 1 Organic lemon
- 300 g Yogurt (1.5% fat)

Wash and clean the Swiss chard leaves. Trim stems and finely dice them. Blanch leaves in boiling salted water for 1 minute, drain, rinse with cold water, and let dry. Peel garlic. Wash and trim chili pepper. Dice garlic and chili very finely.

Heat oil in a pan. Sauté garlic, chili, and diced chard at medium heat for 2 minutes. Add couscous and fry for 1 minute. Stir in broth and simmer gently for about 5 minutes until the mixture has absorbed the liquid. Remove from heat and season with salt, pepper, and a pinch of cinnamon.

Lay Swiss chard leaves side by side on a work surface. Place a heaping tablespoon of filling at the lower end of each leaf, fold in the sides, and roll tightly.
