Ingredients
- 8 Piquillo peppers (fresh or canned)
- 100 g sheep cheese
- 200 g goat fresh cheese
- 2 sprigs fresh thyme
- 1 Shallot
- 1 garlic clove (optional)
- Salt
- freshly ground pepper
- paprika powder (sweet)
- sugar
Instructions

Clean and hollow the peppers, then drain them.

Crumb the feta as finely as possible with a fork and mix well with the goat cheese.

Remove thyme leaves, finely chop them, and add to the cheese mixture.

Peel and dice the shallot and optional garlic into very small cubes; add to the cheese mixture and stir thoroughly. Season the filling with spices, then balance with sugar.

Spoon the filling into a piping bag and evenly fill each pepper.

Arrange the stuffed peppers on a plate and garnish with thyme and paprika powder.
