Ingredients

  • 1.5 kg lamb leg or shoulder (deboned)
  • 2 Apples
  • a handful of basil
  • 200 g Goat cheese
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp Vegetable oil
  • 2 sprigs Rosemary
  • 200 ml dry white wine
  • 400 ml lamb stock

Instructions

    Preheat the oven to 160°C with fan and top heat.

    Rinse the lamb, pat dry and lay flat or cut as needed. Peel the apples, quarter them, remove cores and dice finely. Rinse basil, shake dry, pluck leaves and chop finely. Mix goat cheese into apple cubes and season with salt and pepper. Stuff the mixture into the lamb, roll up and tie with kitchen twine. Season again and sear all sides in hot oil in a roasting pan. Add rosemary and deglaze with wine. Pour in some stock and roast in the oven for 2–2.5 hours, turning occasionally and adding more stock if needed.

    Remove the roast from the sauce, cut off the twine and slice to serve.
