Salmon with Vegetables Baked in Foil

Fresh salmon fillets and seasonal vegetables are wrapped in foil for a quick, healthy meal.

Ingredients

  • 8 Cherry tomatoes
  • 1 large red bell pepper
  • 150 g celery root
  • 4 pieces salmon fillet (about 200 g each)
  • Salt
  • ground pepper
  • 1 tbsp Lemon Juice
  • 4 tsp softened butter
  • aluminum foil

Instructions

    Wash and halve the tomatoes. Wash, trim, halve, seed, remove white membrane from the pepper, and cut into strips. Peel the celery root and dice small.

    Rinse salmon pieces cold, pat dry, season with salt and pepper, drizzle with lemon juice. Cut aluminum foil into 4 squares about 30 x 30 cm and grease each with 1 tsp softened butter. Place one fish piece on each square, arrange vegetables on top, season again.
