Stuffed Bell Peppers with Ground Meat and Rice

Ingredients

  • 200 g Long grain rice
  • Salt
  • 1 tsp sunflower oil
  • 1 Shallot
  • 1 Garlic clove
  • 50 g black pitted olives
  • 20 g raisins
  • 4 red bell pepper halves
  • 1 egg
  • 300 g minced beef
  • 4 sprigs Parsley
  • Pepper

Instructions

    Cook the rice in salted water according to package instructions.

    Meanwhile, grease a baking dish with oil. Peel and finely chop the shallot and garlic; roughly chop the olives and raisins.

    Wash, halve, and clean the bell pepper halves.

  4. 4.

    Combine all chopped ingredients and the egg with the minced beef. Wash, dry, and chop the parsley, then mix into the rice. Season everything with salt and pepper.

    Fill the pepper halves with the meat mixture. Place them in the baking dish, pour a little water over, and bake in a preheated oven at 180 °C (160 °C fan) for about 35 minutes.
